The Swiss Water process uses water only (no chemicals) to remove the caffeine. This results in a higher quality taste with no chemical residues. The process involves first soaking the green beans in hot water. This causes the beans to release their caffeine. The liquid is then separated and passed through an activated carbon filter that traps the caffeine. The decaffeinated beans are then dried out and the majority of their flavour qualities are left intact.
